  • 1 tbsp olive oil
  • 4 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 tsp Cajun seasoning, plus more to taste
  • Salt and pepper, to taste
  • 12 oz penne pasta
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 oz cream cheese, softened
  • 2 tbsp chopped parsley or chives, optional, for garnish

Instructions

  1. Cook penne in salted boiling water until al dente; drain and set aside.
  2. Season chicken with Cajun seasoning, garlic powder, smoked paprika, salt, and black pepper.
  3. In a skillet, heat olive oil and 2 tablespoons of butter over medium-high heat. Sear chicken until golden brown; remove from skillet.
  4. In the same skillet, sauté remaining garlic in butter, then add heavy cream and chicken broth. Simmer for 2–3 minutes.
  5. Stir in all cheeses until melted into a creamy sauce.
  6. Combine cooked penne with sauce; toss well to coat.
