  • 2 cloves garlic, minced
  • 1 cup beef broth
  • ¾ cup frozen peas
  • ½ cup milk
  • 2 tablespoons butter
  • Optional: ½ cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Scrub and dry the russet potatoes; prick them with a fork, rub with olive oil and salt, then bake directly on the oven rack for 45–50 minutes until tender.
  3. In a skillet, heat olive oil and brown the ground meat. Add onion, carrots, and garlic; cook until softened.
  4. Stir in beef broth, tomato paste, and seasonings; simmer for about 10 minutes.

  6. Once potatoes are baked, slice off the tops and scoop out some flesh to mix with milk, butter, garlic powder, salt, and pepper.
  7. Fill each potato skin with the meat mixture, top with mashed potato mixture (and cheese if desired), then return to the oven for an additional 10–15 minutes until golden brown.
