  • 2 medium zucchini (cubed)
  • 1 onion (cut into pieces)
  • 1 bell pepper (cut into pieces)
  • 4 fully cooked chicken sausages (sliced)
  • 2 ½ tbsp olive or avocado oil
  • 1 tsp garlic (minced)
  • ¼ tsp garlic powder
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ¼ tsp onion powder
  • ¼ tsp pepper
  • ½ tsp salt

Instructions

  1. Heat 1 tablespoon of olive oil in a non-stick skillet over medium-high heat.
  2. Add sliced sausages to the skillet and sauté until browned; remove from the pan.
  3. In the same skillet, add remaining oil, zucchini, onion, and bell pepper along with the spices. Stir well.
  4. Cook until veggies are tender (about 5 minutes).
  5. Return sausage to the skillet with minced garlic; stir to combine and heat through.
