  • 3 tablespoons butter (divided)
  • 2 small zucchini (sliced)
  • Salt and black pepper (to taste)
  • 1 small yellow onion (diced)
  • 1 pound small button mushrooms (cleaned)
  • 3 to 4 cloves garlic (minced)
  • 2 teaspoons fresh herbs (or dried thyme/oregano)
  • ¼ cup vegetable broth
  • Chopped fresh parsley (for garnish)

Instructions

  1. Heat olive oil and ½ tablespoon butter in a large skillet over medium-high heat.
  2. Add zucchini slices, season with salt and pepper, and cook for 3 to 4 minutes until tender. Remove from skillet.
  3. In the same skillet, melt remaining butter, then sauté onions for about 2 minutes.
  4. Add mushrooms and cook for 5 to 7 minutes until browned. Stir occasionally.
  5. Mix in garlic and herbs; cook for an additional 20 seconds.
  6. Return zucchini to the skillet; stir well and heat through for about a minute.
  7. Pour in vegetable broth; simmer for another 2 minutes.
  8. Adjust seasoning if needed, then garnish with parsley before serving.
