  • 2 lbs beef chuck, cut into bite-sized cubes
  • 1 tablespoon coconut oil
  • 1 large onion, diced
  • 4 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon chili flakes (optional)
  • 1 (14 oz) can full-fat coconut milk
  • 1 (14 oz) can crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • Salt and pepper, to taste

Instructions

  1. Heat coconut oil in a large skillet over medium heat. Sauté diced onion until translucent, then add minced garlic and grated ginger until fragrant.
  2. Add beef cubes to the skillet and brown on all sides for about 5-7 minutes. Transfer to a slow cooker.
  3. In the slow cooker, combine curry powder, ground cumin, turmeric, ground cinnamon, chili flakes, coconut milk, crushed tomatoes, tomato paste, brown sugar, lime juice, salt, and pepper. Stir well.
  4. Cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
  5. Taste and adjust seasoning before serving hot over rice or with naan.
