  • 1 medium onion (diced)
  • 4 cloves garlic (minced)
  • 2 stalks celery (diced)
  • 2 medium carrots (diced)
  • 2 medium zucchini (diced)
  • 28 ounces diced tomatoes
  • 6 cups chicken broth
  • 15 ounces dark red kidney beans (drained & rinsed)
  • 15 ounces white cannellini beans (drained & rinsed)
  • 1 cup ditalini pasta
  • Salt & pepper (to taste)

Instructions

  1. Prepare all vegetables by dicing the onion, celery, carrots, zucchini, and mincing the garlic.
  2. In your slow cooker, combine prepared vegetables with Italian seasoning, diced tomatoes, chicken broth, kidney beans, cannellini beans, salt, and pepper. Stir well.
  3. Cover and cook on LOW for 6 hours or HIGH for 4 hours.
  4. About 30 minutes before serving, stir in the ditalini pasta and cover until cooked through.
  5. Serve hot with garnishes like freshly grated Parmesan cheese and chopped parsley.
