  • 50g granulated sugar
  • 2 1/4 tsp active dried yeast
  • 2 large eggs
  • 565g all-purpose flour
  • 30g unsalted butter (for filling)
  • 850g diced apples
  • 190g unsalted butter (for cinnamon mixture)
  • 280g brown sugar
  • 225g cream cheese (for frosting)
  • 1/2 tsp kosher salt
  • 1/4 tsp kosher salt
  • 1 Tbsp corn starch
  • 125g pecan halves
  • 2 Tbsp plus 1 tsp ground cinnamon
  • 1/8 tsp kosher salt
  • 250g powdered sugar, sifted
  • 12 Tbsp heavy whipping cream

Instructions

  1. For the dough, combine lukewarm milk, sugar, and yeast; let sit until frothy.
  2. Add eggs and salt, then gradually mix in flour until a dough forms.
  3. Knead in softened butter until smooth and elastic. Let rise covered in a warm place for about an hour.
  4. To prepare the filling, melt butter in a skillet, add diced apples, sugar, cinnamon, salt, and cornstarch; cook until apples are tender.
  5. Roll out the dough into a rectangle; spread with softened butter and sprinkle with cinnamon-sugar mixture.
  6. Place apple filling and pecans on top before rolling tightly into a log.
  7. Cut into equal portions and let rise again for about 30 minutes before baking at 180°C (350°F) for 25-30 minutes.
  8. For the frosting, beat together butter and cream cheese; gradually add powdered sugar until creamy.
