  • 1 chicken breast (cubed)
  • 1 tsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • Salt & pepper to taste
  • 1 cucumber, sliced
  • 6 cherry tomatoes, halved
  • 2 tbsp red onion, chopped
  • 1 tbsp chopped mint or parsley
  • Squeeze of lemon juice
  • 1 cup cooked white rice
  • 1 avocado, sliced
  • 1 tbsp spicy mayo (mayo + sriracha mix)
  • Optional: baby spinach or mixed greens

Instructions

  1. In a non-stick skillet over medium heat, toss cubed chicken in olive oil and seasonings (paprika, garlic powder, chili powder, salt, and pepper). Cook for 5-6 minutes until browned and fully cooked.
  2. In a mixing bowl, combine sliced cucumber, halved cherry tomatoes, chopped red onion, herbs, lemon juice, salt, and pepper. Toss well and chill.
  3. In a serving bowl, layer cooked white rice as the base; add optional greens if desired. Arrange grilled chicken on top followed by avocado slices and chilled cucumber salad. Drizzle spicy mayo over the dish before serving.
