1 chicken breast (cubed)
1 tsp olive oil
1 tsp paprika
1 tsp garlic powder
1 tsp chili powder
Salt & pepper to taste
1 cucumber, sliced
6 cherry tomatoes, halved
2 tbsp red onion, chopped
1 tbsp chopped mint or parsley
Squeeze of lemon juice
1 cup cooked white rice
1 avocado, sliced
1 tbsp spicy mayo (mayo + sriracha mix)
Optional: baby spinach or mixed greens
Instructions
In a non-stick skillet over medium heat, toss cubed chicken in olive oil and seasonings (paprika, garlic powder, chili powder, salt, and pepper). Cook for 5-6 minutes until browned and fully cooked.
In a mixing bowl, combine sliced cucumber, halved cherry tomatoes, chopped red onion, herbs, lemon juice, salt, and pepper. Toss well and chill.
In a serving bowl, layer cooked white rice as the base; add optional greens if desired. Arrange grilled chicken on top followed by avocado slices and chilled cucumber salad. Drizzle spicy mayo over the dish before serving.
