  • 2 lbs lamb shoulder, cut into cubes
  • 2 tablespoons oil (vegetable or ghee)
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1-inch piece fresh ginger, grated
  • 2 tablespoons Madras curry powder
  • 1 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper (optional)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon tomato paste
  • 1 cup crushed tomatoes
  • 1 cup beef broth
  • 1/2 cup full-fat coconut milk
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by chopping the onion, mincing the garlic, and grating the ginger.
  2. In a heavy-bottomed pot or Dutch oven, heat the oil over medium heat. Add the chopped onion and sauté until translucent. Then add garlic and ginger; cook for another minute until fragrant.
  3. Stir in Madras curry powder, turmeric, cayenne pepper (if using), ground cumin, smoked paprika, and ground cinnamon. Cook for about 2 minutes to toast the spices.
  4. Add cubed lamb shoulder to the pot; stir well to coat with spices and brown on all sides.
  5. Mix in tomato paste followed by crushed tomatoes, broth, and coconut milk. Bring to a gentle boil.
  6. Reduce heat to low and partially cover the pot; let simmer for about an hour or until lamb is tender.
  7. Taste before serving; adjust salt and pepper as needed.
