Spinach and Feta Cheese Börek is a delightful Turkish pastry that combines flaky phyllo dough with a savory filling of fresh spinach and creamy feta cheese.   • 1 tablespoon olive oil (or any vegetable oil such as avocado oil)
  • 1 medium-size onion (peeled and chopped)
  • 16 oz. baby spinach leaves (washed and dried)
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 8 oz. crumbled feta cheese
  • 3 tablespoon olive oil (or any vegetable oil such as avocado oil)
  • 1/2 cup whole milk
  • 1 large egg
  • 2 tablespoons plain whole-milk yogurt
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package of Phyllo Dough (thawed overnight in the fridge)
  • 2 egg yolks
  • 2 tablespoons sesame seeds
  • 1/2 teaspoon Nigella seeds (optional)

Instructions

  1. 1. In a large pan, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 4-5 minutes. Stir in spinach, salt, and pepper; cook until wilted. Let cool for 15 minutes.
  2. 2. Preheat the oven to 350°F (175°C).
  3. 3. In a bowl, whisk together olive oil, milk, egg, yogurt, salt, and black pepper.
  4. 4. Layer phyllo sheets on a parchment-lined baking sheet, brushing each layer with the milk mixture.
  5. 5. Spread the cooled spinach and feta filling on top of the layered phyllo.
  6. 6. Cover with additional phyllo layers and brush with the milk mixture before pre-slicing into pieces.
  7. 7. Brush each piece with egg yolk and sprinkle sesame seeds on top before baking for 30-35 minutes until golden brown.
