  • 2 cups fresh spinach, sautéed and chopped
  • 8 oz low-moisture mozzarella cheese, cubed
  • 3 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • Olive oil for searing

Instructions

  1. Sauté minced garlic in olive oil until fragrant. Add spinach and cook until wilted. Cool slightly, then chop.
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, salt, pepper, egg, and chopped spinach. Mix gently.
  3. Form meatballs by flattening a portion of meat in your palm, placing a mozzarella cube in the center and sealing it around the cheese.
  4. Heat olive oil in a skillet over medium heat and sear meatballs until golden brown on all sides (about 2-3 minutes per side).
  5. Finish cooking by either covering the skillet for another 5–7 minutes or transferring to a preheated oven at 375°F for 10–12 minutes.
