  • ⅓ cup neutral oil (vegetable, avocado, canola)
  • 1 cup milk or water
  • 4 large eggs
  • ¼ cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 1½ tbsp cocoa powder
  • ½ tsp vanilla extract
  • Pinch of salt
  • 12 oz dark cocoa candy melts
  • White nonpareils or sprinkles

Instructions

  1. Preheat oven to 325°F (163°C). Prepare baking pan according to cake mix instructions.
  2. In a large bowl, combine all cake ingredients and pour into the prepared pan. Bake following package directions until a toothpick comes out clean.
  3. Once cooled, crumble the cake into a mixing bowl using an electric mixer.
  4. Prepare buttercream by combining powdered sugar and cocoa powder; mix into the crumbled cake until well combined.
  5. Roll mixture into 1¼-inch balls and chill in the freezer for 15 minutes.
  6. Melt candy melts per package instructions and dip lollipop sticks into melted candy before inserting them into each ball.
  7. Chill again for another 15 minutes before dipping each pop into melted candy to coat evenly.
  8. Tap off excess coating and decorate quickly with sprinkles before they set.
