  • cup plant-based cream

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 11 x 8-inch casserole dish with butter.
  2. Combine chopped dates with baking soda in a bowl, then scald the milk in a saucepan and pour over the dates. Let cool for 15 minutes.
  3. Mix flour, baking powder, and salt in one bowl; beat eggs in another. In a food processor, blend eggs, dark brown sugar, butter, and vanilla until smooth. Gradually add dry ingredients and the cooled date mixture.
  4. Pour batter into the prepared dish and bake for about 30 minutes until set.
  5. While the cake bakes, prepare the salty caramel sauce by melting butter, adding brown sugar, kosher salt, and plant-based cream until thickened.
  6. Once baked, poke holes in the cake and pour some caramel sauce over it to soak.
  7. Let rest for 15 minutes before serving warm with additional sauce drizzled on top.
