  • 4 large eggs
  • 1 cup whole milk
  • 1 cup vegetable oil
  • 1 cup mashed fresh strawberries (or strawberry puree)
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 box white cake mix (15.25 oz)
  • 8 oz cream cheese, softened
  • 1 cup unsalted butter, softened
  • 23 cups powdered sugar

Instructions

  1. Preheat oven to 350F (175C). Grease and flour three 8-inch or 9-inch round cake pans.
  2. In a large bowl, combine the cake mix and strawberry vegan gelatin powder. Add eggs, milk, oil, sour cream, mashed strawberries, and vanilla. Beat until smooth.
  3. Divide batter between prepared pans and bake for 22-28 minutes until a toothpick comes out clean.
  4. Cool cakes in pans for 10 minutes before transferring to wire racks.
  5. For the frosting, beat cream cheese and butter until fluffy. Gradually add powdered sugar and then cold heavy whipping cream; whip until peaks form.
  6. Assemble the cooled cake layers with frosting between each layer and on top.
