2 cups sliced strawberries
1/2 red onion (thinly sliced)
1/4 cup dried cranberries
1/2 cup feta cheese crumbles or dairy-free alternative
2 grilled chicken breasts (sliced)
1 1/2 cups pecan halves
1/4 cup apple cider vinegar
2 tablespoons honey
2 tablespoons white sugar
1 teaspoon Dijon mustard
Salt and pepper to taste
3/4 cup olive oil or vegetable oil
1/4 cup white sugar for glazed pecans
2 tablespoons water for glazed pecans
1/4 teaspoon salt for glazed pecans
1/8 teaspoon black pepper for glazed pecans
1/4 teaspoon cayenne pepper for glazed pecans
Instructions
Prepare the dressing by whisking together apple cider vinegar, honey, white sugar, Dijon mustard, salt, and pepper in a mixing bowl. Slowly add olive oil while whisking until well combined.
For the glazed pecans, preheat your oven to 350°F. In a saucepan, bring water, white sugar, salt, black pepper, and cayenne to a boil. Add pecans and stir for 30 seconds before transferring them to a greased baking sheet. Bake for 12-14 minutes until golden brown.
In a large bowl, combine mixed greens with sliced strawberries, red onion, dried cranberries, feta cheese (or alternative), grilled chicken slices, and the glazed pecans. Toss gently with dressing before serving.
