  • 4 large Portobello mushrooms (stems removed)
  • 2 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 cup spinach (chopped)
  • ½ cup cherry tomatoes (diced)
  • ¼ cup breadcrumbs
  • ¼ cup Parmesan cheese (grated)
  • ½ cup mozzarella cheese (shredded)
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking sheet.
  2. Brush both sides of the mushrooms with olive oil and place them gill-side up on the baking sheet. Season with salt and pepper.
  3. In a skillet over medium heat, sauté minced garlic in olive oil for about 1 minute until fragrant. Add chopped spinach and cook until wilted. Remove from heat and stir in diced cherry tomatoes, breadcrumbs, Parmesan cheese, Italian seasoning, and additional salt and pepper.
  4. Spoon the filling evenly into each mushroom cap and sprinkle shredded mozzarella cheese on top.
  5. Bake for 15–18 minutes or until the mushrooms are tender and the cheese is melted and bubbly.
  6. Garnish with fresh basil or parsley before serving warm.
