  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter (room temperature)
  • 1 cup sugar
  • 1 egg
  • 1/2 cup buttermilk
  • 2 teaspoons pure vanilla extract

Instructions

  1. Preheat the oven to 350°F and generously butter a 9" deep-dish pie plate.
  2. Peel and slice the peaches into thin wedges, placing them on a paper towel to absorb excess moisture.
  3. In a medium bowl, whisk together flour, baking powder, and salt; set aside.
  4. In a large bowl, cream the butter until fluffy; add sugar and beat until light.
  5. Mix in the egg, buttermilk, and vanilla until well combined.
  6. Gradually add the dry ingredients to the wet mixture until just incorporated.
  7. Pour the batter into the prepared pie plate and arrange peach slices on top; sprinkle with sparkling sugar.
  8. Bake for 10 minutes at 350°F, then reduce temperature to 325°F and bake for an additional 50-60 minutes or until a toothpick comes out clean.
  9. Allow to cool slightly before slicing.
