  • ½ cup butter (room temperature)
  • 1 ⅔ cups sugar
  • 2 eggs
  • 1 ½ teaspoons vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • 3 cups diced & peeled apples (approx. 2 large apples)
  • Optional: ¼ cup chopped pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In one bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, cream together the butter and sugar until light. Add eggs one at a time and mix in vanilla.
  4. Gradually combine dry ingredients with wet ingredients, mixing until just combined. Fold in diced apples and nuts if desired.
  5. Pour batter into the prepared pan and bake for approximately 35 to 40 minutes until golden brown.
  6. While baking, prepare the caramel sauce by combining brown sugar, half & half, and butter in a saucepan over medium-low heat until smooth.
  7. After baking, drizzle the warm cake with caramel sauce and return to the oven for an additional 10 to 15 minutes.
  8. Allow cooling for at least fifteen minutes before serving.
