  • 3 pounds pickling cucumbers or 4 pounds large cucumbers
  • 1 large sweet onion
  • 2 tablespoons pickling or kosher salt
  • 1 cup apple cider vinegar
  • 2 1/2 cups sugar
  • 4 cloves garlic, minced
  • 2 teaspoons dill seed
  • 2 teaspoons mustard seed
  • 2 teaspoons celery seed
  • ½ teaspoon turmeric

Instructions

  1. Slice cucumbers lengthwise and remove seeds; finely dice cucumber and onion using a food processor.
  2. In a non-reactive pot, combine diced vegetables with salt and let sit for 2 hours.
  3. Drain mixture using a strainer to remove excess moisture.
  4. In a medium pot, combine vinegar, sugar, garlic, dill seed, celery seed, mustard seed, and turmeric; bring to a boil.
  5. Add drained cucumber and onion mixture back into the pot; return everything to boiling.
  6. Reduce heat and simmer for 10 minutes.
  7. Cool before storing in the refrigerator for up to 6 weeks or process in a hot water bath canner for long-term storage.
