  • 1/4 cup granulated sugar
  • 12 tablespoons unsalted butter (melted)
  • 2 cups fresh sweet potato puree
  • 3 large eggs
  • 1 1/2 cups whole milk
  • 1/2 cup heavy cream
  • 1 teaspoon fine sea salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 2 large egg whites
  • 1/4 teaspoon cream of tartar
  • 3/4 cup granulated sugar
  • 1/2 cup light corn syrup
  • 1/4 cup water
  • 1/4 teaspoon fine sea salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. For the crust, blend graham crackers in a food processor until finely crushed. Mix with sugar and melted butter; press into a greased baking dish and bake for 10-12 minutes.
  3. For the filling, whisk together sweet potato puree, sugar, eggs, milk, heavy cream, salt, and spices. Pour over the pre-baked crust.
  4. Bake for 40-45 minutes until set; let cool completely.
  5. Prepare the vegan marshmallow topping by beating egg whites with cream of tartar until soft peaks form. Gradually add sugar; continue beating until stiff peaks form. Heat corn syrup and water to soft ball stage before slowly adding to egg whites while mixing.
  6. Spread the topping over cooled filling and toast lightly if desired. Cut into bars and serve.
