  • 2/3 cup (135 grams) granulated sugar (plus 3 tablespoons for rolling)
  • 2 large egg yolks (room temperature)
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 2 and 1/3 cups (290 grams) all-purpose flour
  • 1/2 cup strawberry or apricot jam

Instructions

  1. Preheat your oven to 350°F (177°C). Line two baking sheets with parchment paper.
  2. In a mixing bowl, cream together the softened butter and sugar until smooth. Add egg yolks, vanilla extract, and salt; mix well. Gradually incorporate flour until a soft dough forms.
  3. Use a cookie scoop to portion out the dough and roll each into balls. Roll in granulated sugar if desired.
  4. Create an indentation in each ball with your thumb and fill it with about 1/2 teaspoon of jam.
  5. Bake for 12-14 minutes until lightly golden on the bottoms. Cool on the baking sheet for 10 minutes before transferring to a wire rack.
