  • 113 g unsalted butter
  • 200 g dark chocolate
  • 100 g brown sugar
  • 50 g granulated sugar
  • 3 eggs
  • 90 g all-purpose flour (sifted)
  • A pinch of salt
  • 1/2 tsp vanilla extract
  • 2 shots espresso or instant coffee
  • 250 g mascarpone cheese (room temperature)
  • 240 ml heavy cream
  • 50 g sugar
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 2 tbsp espresso powder
  • Cocoa powder for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8 or 9-inch square baking tin with parchment paper.
  2. Melt chopped dark chocolate and unsalted butter in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  3. Mix brown sugar and granulated sugar into the melted chocolate until well combined.
  4. Add eggs one at a time, whisking each until fully incorporated.
  5. Sift flour and salt into the mixture and gently fold until just combined.
  6. Pour batter into the prepared tin and bake for 25–30 minutes; check doneness with a toothpick.
  7. While still warm, poke holes and pour espresso over the top before cooling completely.
  8. Top with whipped mascarpone cheese mixed with heavy cream, sugar, salt, espresso powder, and vanilla extract.
