  • 1/2 cup dry quinoa
  • 3/4 cup water
  • 23 cups chopped/sliced tomato
  • 15 oz can chickpeas (drained and rinsed)
  • 1/4 cup chopped green onion
  • 1 TBSP fresh chopped parsley
  • 1/4 cup fresh lime juice (from 2 limes)
  • 2 TBSP avocado oil
  • 1 clove garlic (smashed and minced)
  • 1 TBSP fresh chopped parsley
  • 1/2 tsp ground cumin
  • 1/4 tsp sea salt
  • 1/8 tsp pepper

Instructions

  1. Rinse quinoa under cold water using a mesh strainer. In a small pot over medium heat, lightly toast the quinoa for a few minutes.
  2. Add water to the pot and bring it to a boil. Cover and simmer on low heat for 12-13 minutes until fluffy.
  3. While cooking, chop tomatoes and green onion. Prepare the dressing by mixing avocado oil, lime juice, minced garlic, parsley, cumin, salt, and pepper.
  4. Once quinoa cools slightly, combine it with tomatoes, chickpeas, green onion, parsley, and toss with half of the dressing. Enjoy!
