  • 20 oz cheese tortellini
  • 1 pint cherry tomatoes
  • 1 cucumber
  • 1/2 red onion
  • 1 cup kalamata olives
  • 1 cup fresh mozzarella balls
  • 1/2 cup salami
  • 1/4 cup grated Parmesan cheese
  • 2 cups baby spinach or arugula
  • 1/4 cup fresh basil
  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • 1 clove garlic, minced
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini in salted water according to package instructions until al dente. Drain and rinse under cold water.
  2. In a jar, combine olive oil, red wine vinegar, Dijon mustard, honey, minced garlic, oregano, salt, and pepper. Shake until emulsified.
  3. Toss warm tortellini with half of the dressing and let cool for 10 minutes.
  4. Add tomatoes, cucumber, red onion, olives, mozzarella, salami, Parmesan cheese, spinach, and basil to the bowl with tortellini. Pour remaining dressing over top and toss gently.
  5. Cover and refrigerate for at least 2 hours before serving.
