Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, sugar, and salt. Stir well.
  2. Melt the vegan butter and mix it into the crumb mixture until evenly combined. Press firmly into the bottom of a springform pan.
  3. In another bowl, beat vegan cream cheese until smooth; add sour cream, lemon juice, and vanilla extract, mixing well. Add flax eggs one at a time, incorporating them fully before adding the next.
  4. Gently fold in culinary lavender. Pour filling over the crust and bake for about 60 minutes until set but slightly jiggly in the center.
  5. Turn off the oven and let it cool inside for an hour before refrigerating for at least four hours or overnight.
