  • 2 tablespoons oil (or water for oil-free)
  • 9 oz (255g) vegan beef or portobello mushrooms
  • 1 large onion, diced
  • 3 large carrots, chopped
  • 2 ribs celery, diced
  • 5 cloves garlic, minced
  • 4 cups vegetable stock
  • 4 large potatoes, cut into chunks
  • ¼ head green cabbage, shredded
  • Fresh herbs: thyme and rosemary

Instructions

  1. Chop all vegetables: onion, carrots, celery, garlic, rutabaga/swede, and potatoes.
  2. In a large Dutch oven over high heat, add oil and sear the vegan beef or mushrooms until golden. Remove from pot.
  3. Lower heat to medium; sauté onions, carrots, and celery until softened. Add garlic.
  4. Stir in flour; cook for 1-2 minutes.
  5. Gradually add vegetable stock while stirring to avoid lumps. Add remaining ingredients: rutabaga/swede, potatoes, cabbage, soy sauce, salt, pepper, sugar, and herbs.
  6. Bring to a boil; then reduce heat to medium-low and simmer uncovered for about 45-50 minutes until potatoes are tender.
  7. Stir in seared vegan beef/mushrooms before serving.
