  • 14 oz extra-firm tofu
  • 3 tablespoons cornstarch
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 medium onion
  • 3 cloves garlic
  • 1 tablespoon fresh ginger
  • 2 tablespoons soy sauce (or tamari)
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup

Instructions

  1. Press the tofu between kitchen towels for 15 minutes to eliminate excess moisture.
  2. Cut the pressed tofu into 1-inch cubes and toss with cornstarch until evenly coated.
  3. Heat oil in a large skillet over medium-high heat; add tofu in a single layer and cook without moving for about 4 minutes until golden brown. Flip and cook for an additional 3 minutes before removing from the skillet.
  4. In the same skillet, sauté sliced peppers and onions for about 5 minutes until caramelized.
  5. Add minced garlic and ginger; cook for another 30 seconds until fragrant.
  6. Toss in pineapple chunks and allow them to caramelize for about 2-3 minutes.
  7. Mix soy sauce, rice vinegar, and maple syrup in a bowl, then pour over the mixture in the skillet. Return the crispy tofu to the pan and stir gently for about 2 minutes.
