  • 2 cups shredded zucchini
  • 1 cup Panko bread crumbs
  • 2 eggs
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup shredded Mozzarella cheese
  • 2 garlic cloves (minced)
  • 3 tbsp canola oil (for cooking)
  • salt
  • fresh cracked black pepper

Instructions

  1. Grate the zucchini using a box grater and squeeze out excess moisture using a mesh bag or cheesecloth.
  2. In a mixing bowl, combine the drained zucchini with Panko breadcrumbs, eggs, Parmesan cheese, Mozzarella cheese, minced garlic, salt, and pepper until well-mixed.
  3. Preheat a large pan over medium heat and add canola oil.
  4. Scoop even portions of the mixture into the pan, shaping them into fritters with your hands.
  5. Cook for 4-6 minutes on each side until golden brown.
