  • 1/3 cup breadcrumbs
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 1 large egg
  • 2 tbsp fresh chives (chopped or 1 tbsp dried chives)
  • 1 tbsp fresh parsley (chopped or 1/2 tsp dried parsley)
  • 1 tsp fresh basil (chopped or 1/2 tsp dried basil)
  • 1 tsp fresh oregano (chopped or 1/2 tsp dried oregano)
  • A pinch of salt and pepper
  • Tomato sauce (for dipping)

Instructions

  1. Preheat the oven to 400°F and grease a baking sheet.
  2. Grate the zucchini and squeeze out excess moisture using a towel.
  3. Grate the garlic finely for even flavor distribution.
  4. In a mixing bowl, combine zucchini, garlic, egg, breadcrumbs, cheese, herbs, salt, and pepper until mixed well.
