  • 1 cup shredded zucchini (drained well)
  • 1 clove garlic (grated fine)
  • 1/3 cup bread crumbs
  • 1/4 cup grated Parmigiano-Reggiano cheese
  • 1 large egg
  • 2 tablespoons chopped fresh chives
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon chopped fresh basil
  • 1 teaspoon chopped fresh oregano
  • Pinch of salt and pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly coat a baking sheet with olive oil or non-stick spray.
  2. Grate the zucchini using a box grater, then wrap it in a clean towel to squeeze out excess moisture.
  3. Grate the garlic and combine it in a mixing bowl with the drained zucchini, egg, bread crumbs, cheese, chives, parsley, basil, oregano, salt, and pepper. Mix until well combined.
  4. Shape the mixture into small balls (about one tablespoon each) and place them on the prepared baking sheet.
  5. Bake for 15-18 minutes until golden brown. Serve warm with marinara sauce for dipping.
