  • 4 medium zucchinis
  • 2 eggs
  • 1/4 cup grated Parmesan cheese
  • 1 lb ground turkey
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 1 bell pepper (chopped)
  • 1 yellow onion (chopped)
  • 4 cloves garlic (minced)
  • 1 tablespoon olive oil
  • Italian seasoning
  • black pepper
  • onion powder

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grate zucchinis and drain excess moisture using a colander.
  3. In a mixing bowl, combine drained zucchini with eggs, Parmesan cheese, black pepper, onion powder, and half the Italian seasoning.
  4. Press the mixture into a greased 9×13 baking pan and bake for 20 minutes.
  5. In a skillet, heat olive oil over medium heat. Sauté onion and bell pepper until soft; add garlic and ground turkey and cook until browned.
  6. Mix in marinara sauce and remaining Italian seasoning; stir well.
  7. Spread turkey mixture over baked zucchini crust; top with mozzarella cheese.
  8. Bake for an additional 20 minutes until cheese is bubbly.
